Coconut and Lime Mojito

40 Degrees today in Perth makes me think of coconut and lime.  So, the cocktail of the day is the "Coconut Mojito."  Thought I would share a recipe to get you started.  



- 2 oz white rum

- 1 oz coconut cream

- 1 oz simple syrup (adjust to taste)

- 1 oz fresh lime juice

- 8-10 fresh mint leaves

- Soda water (club soda)

- Ice cubes

- Lime wedges and mint sprigs for garnish


1. In a shaker, muddle the fresh mint leaves with lime juice and simple syrup to release the mint's flavour.

2. Add the white rum and coconut cream to the shaker.

3. Fill the shaker with ice cubes and shake well to combine the ingredients and chill the mixture.

4. Strain the mixture into a highball glass filled with ice.

5. Top off the glass with soda water to your liking, depending on how strong you prefer your cocktail.

6. Stir gently to mix everything together.

7. Garnish with a lime wedge and a sprig of mint.

Enjoy your Coconut Mojito! Keep in mind that variations of this cocktail might exist, and you can adjust the ingredients and proportions based on your personal preferences.
